In Franciacorta, Luca Archetti does something that is rare in the region: he makes his bubbles from 100% Pinot Nero. After the second fermentation he adds no sugar; that is called Dosaggio Zero. So you taste Pinot Nero as it is: taut, dry and mineral.

Then the box travels to Tuscany. The Toscana Bianco IGT Anfora doesn’t age in wood, but in terracotta amphorae made from the same clay as the soil the grapes grow in. The Chianti Classico Riserva, by contrast, ages for 24 months in oak and closes the evening full and deep.

How to taste them

Il Dosso Pinot Nero Franciacorta 2021 DOCG
Straw yellow with a fine, persistent mousse. Peach blossom, ripe peach and mandarin peel. Taut and mineral, with a long, saline finish.

Ottomani Toscana Bianco IGT Anfora
Golden yellow with an amber glow. Ripe white fruit, citrus and a light earthy touch from the amphora. Fresh, with subtle grip and a slightly saline finish.

Ottomani Chianti Classico Riserva DOCG
Deep ruby red. Ripe cherries, blackcurrant, tobacco and herbs. Full and structured, with a long, gently spicy finish.

Open the Franciacorta with the first glass, alongside salmon or a few slices of mortadella. The Anfora suits shellfish, grilled fish or a creamy risotto.

Save the Riserva for the main course: a stew, game or something with truffle.

Il Dosso is Luca Archetti’s small winery in Franciacorta, with about 6 hectares of vines. Where Pinot Nero usually plays a supporting role next to Chardonnay in the region, Luca also makes a Franciacorta from 100% Pinot Nero. He intervenes as little as possible in the cellar and gives his wines time on the lees.

Ottomani literally means ‘eight hands’. The winery belongs to four friends who bought a farm together just outside Florence in 2006. Their vineyards lie in Val di Pesa, about 15 kilometers south of the city.

The Pinot Nero grows in the moraine amphitheater of Franciacorta, on limestone-rich ground left behind by ancient glaciers. Nearby Lake Iseo keeps the climate cool, and you can taste that in the freshness.

The Tuscan wines come from the hills south of Florence: the Anfora from the clay soils between Impruneta and Strada in Chianti, the Riserva from 40-year-old vines in Greve in Chianti.

The Franciacorta is made using the Metodo Classico, the same method as in Champagne: the second fermentation takes place in the bottle. It then ages for 30 to 33 months on the lees and gets no added sugar. That is called Dosaggio Zero.

The Anfora ferments and ages for 4 to 6 months in terracotta amphorae. The Riserva ages for 24 months in Tuscan oak casks.
