In 2006, four friends bought a farm together just outside Florence and started Ottomani, literally ‘eight hands’. They farm biodynamically, without synthetic fertilizers or chemical sprays, on vines that are often more than forty years old.

This box tells almost their whole story. Two white wines, one of them from terracotta amphorae, and four reds: from the light Chianti Superiore to the Riserva that aged for 24 months in oak. The Sangiovese anfora shows how pure Sangiovese tastes without oak.

How to taste them

Start with the Bianco IGT and the Toscana Bianco IGT Anfora, move on through the Chianti Superiore and the Chianti Classico to the Sangiovese anfora, and finish with the Riserva. This is a suggestion, not an official order from light to full-bodied. You can also open them over a few dinners.

Allergens
Contains sulfites

Ottomani Bianco IGT
Straw yellow with green reflections. Citrus, white flowers and pear on the nose. Fresh and lively, with a slightly saline finish.

Ottomani Toscana Bianco IGT Anfora
Golden yellow with an amber glow. Ripe white fruit, citrus and a light earthy touch from the amphora. Fresh, with subtle grip and a slightly saline finish.

Ottomani Chianti Superiore DOCG
Bright ruby red. Ripe cherries, red berries and violets, with a hint of Mediterranean herbs. Fresh and elegant, with fine tannins.

Ottomani Chianti Classico DOCG
Bright ruby red. Cherries and violets with an earthy, spicy touch. Taut and juicy: the concrete keeps the fruit pure.

Ottomani Sangiovese anfora IGT
Bright ruby red. Cherries, red berries and violets. Fresh and pure, with fine tannins and a mineral finish without oak.

Ottomani Chianti Classico Riserva DOCG
Deep ruby red. Ripe cherries, blackcurrant, tobacco and herbs. Full and structured, with a long, gently spicy finish.

Pour the two whites with antipasti, shellfish or grilled fish. The Chianti Superiore and the Sangiovese anfora are versatile: pizza, pasta in tomato sauce or a charcuterie board.

The Chianti Classico belongs with a ragù that has been simmering all afternoon. Save the Riserva for a stew, game or an aged pecorino.

Ottomani literally means ‘eight hands’. The winery belongs to four friends who bought a farm together just outside Florence in 2006. Their vineyards lie in Val di Pesa, about 15 kilometers south of the city.

They farm biodynamically: no synthetic fertilizers or chemical sprays, but living soils with nature as their guide. In the cellar they intervene as little as possible. They harvest by hand, let the wine ferment spontaneously with wild yeasts and filter lightly or not at all.

All six wines come from the hills south of Florence: around Val di Pesa, in Greve in Chianti and between Impruneta and Strada in Chianti. The soils are rich in limestone, with clay, marl and galestro.

Around Impruneta, that clay has been used for terracotta for centuries. The amphorae in which two of these wines age are made from it too.

Everything is harvested by hand and ferments spontaneously with wild yeasts. After that, each wine gets its own aging: steel tanks for the Bianco IGT, large wooden casks and steel for the Chianti Superiore, and concrete for the Chianti Classico.

The Anfora wines age in terracotta amphorae, the Riserva for 24 months in Tuscan oak casks. So one box shows you what the vessel does to a wine.
