In 2006, four friends bought a farm together just outside Florence and started their own winery: Ottomani, literally ‘eight hands’. They farm biodynamically, so without synthetic fertilizers or chemical sprays, and in the cellar they let the wine find its own way as much as possible.

This box is the easiest way to get to know their style. You start with the fresh Bianco IGT and then pour two Chiantis side by side. You’ll taste straight away how different two wines from the same winery can be.

Ottomani Bianco IGT
Straw yellow with green reflections. Citrus, white flowers and pear on the nose. Fresh and lively, with a slightly saline finish.

Ottomani Chianti Superiore DOCG
Bright ruby red. Ripe cherries, red berries and violets, with a hint of Mediterranean herbs. Fresh and elegant, with fine tannins.

Ottomani Chianti Classico DOCG
Bright ruby red. Cherries and violets with an earthy, spicy touch. Taut and juicy: the concrete keeps the fruit pure.

Start with the Bianco IGT alongside a board of antipasti or a plate of grilled fish. Pour the Chianti Superiore with pizza or pasta in tomato sauce.

Save the Chianti Classico for pappardelle with a ragù that has been simmering all afternoon.

Ottomani literally means ‘eight hands’. The winery belongs to four friends who bought a farm together just outside Florence in 2006. Their vineyards lie in Val di Pesa, about 15 kilometers south of the city.

They farm biodynamically: no synthetic fertilizers or chemical sprays, but living soils with nature as their guide. In the cellar they intervene as little as possible. They harvest by hand, let the wine ferment spontaneously with wild yeasts and filter lightly or not at all.

The grapes grow on the hills south of Florence, around Val di Pesa, Impruneta and Greve in Chianti. The soils are poor and rich in limestone, with clay, marl and galestro: a crumbly Tuscan rock.

The vines are thirty to more than forty years old. They give few grapes per plant, but those grapes are concentrated and fresh.

All three wines are harvested by hand and ferment spontaneously with wild yeasts. The Bianco IGT ages through the winter in stainless steel tanks and is bottled unfiltered.

The Chianti Superiore ages in large wooden casks and steel tanks. The Chianti Classico ages for 14 months in concrete, so the fruit stays pure.
