You may know Chianti from the round-bellied bottle in a straw basket. But what actually is the difference between a Superiore, a Classico and a Riserva? At Ottomani all three come from the same winery, so you taste that difference purely.

The Superiore is light and fresh, with cherries and violets. The Classico comes from Greve in Chianti and ages in concrete, so the fruit stays pure. The Riserva ages for 24 months in oak casks: a Riserva must age longer before it can be sold, and you taste that in its depth.

How to taste them

Pour them side by side, from Superiore to Riserva, just below room temperature. Taste them first without food, then add something savory, such as pecorino or salami.

Ottomani Chianti Classico DOCG
Bright ruby red. Cherries and violets with an earthy, spicy touch. Taut and juicy: the concrete keeps the fruit pure.

Ottomani Chianti Classico Riserva DOCG
Deep ruby red. Ripe cherries, blackcurrant, tobacco and herbs. Full and structured, with a long, gently spicy finish.

Taste the Chianti Superiore with some cheese, salami and olives, the way Enrico likes to drink it after a long day in the vineyard.

Pour the Chianti Classico with pappardelle and a ragù that has been simmering all afternoon. The Riserva asks for something hearty: a stew, game or an aged pecorino.

Ottomani literally means ‘eight hands’. The winery belongs to four friends who bought a farm together just outside Florence in 2006. Their vineyards lie in Val di Pesa, about 15 kilometers south of the city.

They farm biodynamically: no synthetic fertilizers or chemical sprays, but living soils with nature as their guide. In the cellar they intervene as little as possible. They harvest by hand, let the wine ferment spontaneously with wild yeasts and filter lightly or not at all.

The Chianti Classico and the Riserva come from Greve in Chianti, one of the historic heartlands of the region. The soil is limestone with clay and galestro, a crumbly Tuscan rock, and the vines are 30 and 40 years old.

The grapes for the Chianti Superiore grow around Val di Pesa, at 250 to 350 meters above sea level.

All three are harvested by hand and fermented spontaneously with wild yeasts. The Chianti Superiore ages in large wooden casks and steel tanks.

The Chianti Classico ages for 14 months in concrete, without oak. The Riserva, by contrast, ages for 24 months in Tuscan oak casks. So this box also lets you taste what oak does, and doesn’t do, to Sangiovese.
