Cuvée Brut Cielo di Montemaggio
This is a sparkling wine made from Chardonnay grapes and produced using the Charmat Method.
The reason we called this wine “Cielo di Montemaggio” came about one starry night when we have recorded a video of Montemaggio’s sky. Cielo mean sky in italian, and since that video the pelage in this sparkling wine seemed so delicate and so many, that it seemed to have 1000s of stars of Montemaggio sky in a glass. Hence comes the vivid blue colour of the labels with constellation and stars.
All Fattoia di Montemaggio’s wines are certified with the organic label, using only grapes grown following organic methods of agriculture, therefore without synthetic chemicals and without GMOs. The sulphite content is very low compared to non-organic wines.
Other details
The vineyards are situated at altitudes varying from 450 to 600 metres above sea level. The Sangiovese grapes are usually harvested in the second half of October while the Merlot (if added) is picked at the end of September. The two types of grapes undergo fermentation separately in stainless steel tanks at controlled temperatures (less than 26°C). The Sangiovese is put into Slovenian and French oak casks, while the Merlot is put in barrels of second hand, where the malolactic fermentation takes place and where the young wine stays for the aging. It’s important to note that wines we age for much longer than it is advised by the Consortium of Chianti Classico, where the law states that Chianti Classico must age for at least 18 months.
